The British Isles are home to a wide variety of delicious and distinctive regional ingredients, and Chef James Martin takes to the skies to investigate their origins.

To learn why Scottish whisky is not only the best in the world but also a true reflection of the landscape in which it is made, he travels to the fertile plains and lowlands of east Scotland. He also learns what makes the raspberries grown in the Strathmore area so special and in-demand. On the road, he whips up a raspberry panna cotta and serves it with homemade mini doughnuts, as well as whisky-cured salmon with beetroot dressing and blinis.
