Cadiz: The chef travels to Cadiz, Spain, to sample fresh tuna and Manzanilla sherry, two of the city’s most renowned culinary stars. Rick is mesmerised by the city’s narrow winding streets as he follows in the footsteps of ancient Phoenician and Arab traders, whose influence on the city can still be seen today. He makes flamenco eggs and arroz verde, or green rice, with garlic, parsley, clams, and prawns, to create the vibrant colours of the Spanish flag at home.
