Richman starts his culinary journey by tasting the traditional Glamorgan sausage, a vegetarian delicacy with a history dating back to at least the 1850s. The sausage is made with a combination of cheese, usually Caerphilly, leeks, and breadcrumbs, and has become a beloved part of Welsh cuisine. Richman learns about the sausage’s origins, which may be linked to the need for meat-free alternatives during World War II, and its rise in popularity during that time.
