“America’s Test Kitchen” returns this Saturday with a south-of-the-border culinary adventure. “Mexican Classics, Slow and Fast” takes a deep dive into the art of Mexican cooking, featuring recipes from both ends of the time spectrum.

For those who appreciate a slow-cooked masterpiece, test cook Lan Lam prepares Lamb Barbacoa for host Bridget Lancaster, a dish known for its rich, melt-in-your-mouth flavor. On the quicker side of things, Erin McMurrer whips up Rajas Poblanas con Crema for host Julia Collin Davison, a dish that combines roasted poblano peppers with a creamy sauce – perfect for a weeknight meal.
