Andrew Zimmern is back in the Wild Game Kitchen with two new episodes airing back-to-back on FYI, Saturday, May 31, starting at 9:00 PM ET. First up: demystifying the often-intimidating world of live sea urchin and scallops. Zimmern gets hands-on, showing viewers how to crack, shuck, and prepare these delicacies. He pairs the seafood with a refreshing cucumber mignonette and cooks a seafood risotto, making high-end cuisine approachable for the everyday home cook.

Then, at 9:30 PM ET, Zimmern turns his attention to an often-overlooked fish: the mackerel. He creates a main course salad featuring pickled mackerel filets, complemented by seasonal summer sides.
