At 10:00 PM, she presents her unique take on Country Captain Chicken Stew, a Southern dish with an Indian twist, featuring bone-in chicken, curry, tomatoes, and coconut milk served over rice noodles and topped with toasted peanuts.

Then, at 10:30 PM, Chef VanTrece continues her culinary journey, blending Latin and South American influences with Southern charm to craft “Encocado Shrimp with Poblano Stuffed Grits.” This dish, also known as Latin shrimp and grits, shows her ability to harmonise diverse flavours. By marrying the creamy texture of encocado, a traditional Ecuadorian shrimp dish, with the hearty flavour of Southern grits, she creates a unique and indulgent culinary experience.
