In the first episode of new series Nadiya’s Cook Once, Eat Twice, Nadiya Hussain shares clever tips and recipes to transform everyday ingredients and make the most of the weekly shop.
Aiding the home cook in their quest to reduce waste, she shows how to create delicious dishes that can be enjoyed twice while cutting costs.
Hussain presents a range of inventive recipes, including a scrappy salad pasta that gives new life to forgotten leaves, combining them with creamy yoghurt, fresh coriander, rehydrated apricots, and homemade pasta. She also demonstrates a versatile carrot soup, which can be a convenient option for two meals during a busy week.
The economic benefits of her approach are further highlighted with her recipe for bean and potato cakes, ensuring that no potato goes to waste. For those with a sweet tooth, Hussain prepares a banana bark—a mouth-watering combination of chopped bananas, peanut butter, melted dark chocolate, and peanuts.
As well as Hussain’s recipes, the episode features food writer Elly Pear, who shares her take on a galette—a free-form, open-faced savoury tart filled with potato, onion, and blue cheese.
