Nick Knowles explores the beautiful Chilean landscape, trying out hydrospeeding on the fast-flowing river and discovering the relatively new sport’s appeal. He visits a seaweed processing plant, learning how Chile is pioneering innovative ways to harness the sea’s bounty in the fight against climate change. From biodegradable plastic to nutrient-rich food supplements and cattle fodder that reduces methane emissions, Chile is leading the way.

In the coastal town of Puerto Montt, Nick delves into the traditional music and dance of Cueca, which has undergone a cultural reclamation after being tainted by the dictatorship of General Pinochet in the 1980s. He then travels to the mystical island of Chiloe, where he contributes to a Curanto meal—the oldest form of cooking in Chile. Here, seafood, meat, and potatoes are steamed to perfection over hot stones and aromatic leaves.

On Chiloe, Nick also encounters local superstitions and meets a white witch at one of the island’s UNESCO-protected wooden churches. He participates in La Minga, a community tradition where he helps move a shed by maneuvering two massive bulls. Nick concludes his visit to Chiloe by meeting a woman who brings the joy of reading to children across the islands through her floating library.
