British Isles are home to a wide variety of delectable and distinctive regional delicacies, and Chef James Martin goes to the sky to investigate their origins.

While there, he experiences the delights of wild River Severn salmon and learns why one farmer believes his property produces the country’s best virgin rapeseed oil as he travels through the undulating grandeur of the Cotswolds in the county of Gloucestershire. His travel fare includes Cotswold gammon croquettes with garlic rapeseed mayo and cooked wild Severn salmon with asparagus and hollandaise.
