London and South East: Mains and Puddings The three remaining London and Southeast cooks are in the middle of their heat, and the stakes keep rising. Again, they offer their own distinctive spins on the theme of the Paddington Bear 65th anniversary celebration of British animation and illustration.
Two chefs are basing their main courses on Quentin Blake’s Fantastic Mr. Fox illustrations and the animated Wes Anderson film adaptation. One dish honors the squab with oven-roasted squab pigeon topped with pancetta, pumpkin, and marsala sauce, while the other pays tribute to the three farmers, Boggis, Bunce, and Bean, with chicken ballotine, choux buns filled with duck liver parfait and cider gel, and apple cider jus.
Also available is a Peruvian-themed main dish fit for a Paddington bear, which includes seasoned beef sirloin, a short rib beef and marmalade sandwich, and aji verde sauce. It looks like this will be a tense course, with some of the cooks needing to redo parts to make sure they are right for their veteran. Veteran judge Tommy Banks will have to evaluate which entry is the most on target.
